Recent research by the American Psychological Association caught our attention because it applies to the hotel environment. In a study involving 35 U.S. hospitals, it found that health care workers wash their hands less often over the course of their work day. The likely reason is mental and physical fatigue as the day progresses. This is important because hand washing is critical to reducing infections. The parallel to hotel (and other) workers is clear: extra vigilance is needed during the work day to maintain high hygiene standards.
